We thoroughly enjoyed the Fresh Fruit Salad with Cantaloupe, Raspberry, Papaya, Banana, Pineapple and Banana Ricotta Cheese as all the fruit came washed and cut in bite size pieces for easy munching. The banana ricotta cheese packaged separately in a cup was the ideal accompaniment to the fresh fruit. The fruit plates often come with ricotta cheese or yogurt to compliment. The fruits are always fresh and of good quality, making this a great way to start off the day. On the other end of the spectrum, the Artichoke, Brie Cheese, and Parsley Omelet with Seven Grain Toast is simple and superb in everyway. Made with fresh artichokes and creamy brie cheese in between a parsley egg omelet, this delicious starter is ready to be enjoyed after heating. The melted creamy Brie blends beautifully with the light artichokes and can be spread on the individually wrapped seven grain toast. The parsley gives the omelet a natural herb flavor and avoids having to use salt or seasoning. The Fresh Diet also offers other fabulous choices like Carrot and Munster Cheese Quiche, Breakfast Burritos, Tofu Scrambles, and more.

Other fabulous snacks include Turkey and Green Salsa quesadilla, Chicken Apple Sausage, Mushroom Pork Filled Crowns, Grilled Shrimp Skewers, Pink Poached Pear, and more. If you want something a little more gourmet, The Fresh Diet has that too. Who else offers Prosciutto Ham Wrapped Asparagus as a snack? These fresh steamed asparagus tips are wrapped with prosciutto, a delicious Italian cured ham.
We also look forward to lunch because of all the delicious and healthy options available. From Steak Tacos and Salmon Caesar Wraps to Sloppy Joe Subs, there is something for everyone. Salads are a good option for lunch because with the right amount of protein, they can be filling yet natural and healthy. The Classic Cobb Salad with grilled chicken, turkey pastrami, tomato, cucumber, romaine lettuce and ranch dressing is absolutely delicious as it has the right amount of diced white chicken meat, turkey pastrami cubes, veggies and lettuce. Tossed together with the creamy ranch dressing, this salad had flavor and plenty of lean protein. We also really enjoyed the Grilled Turkey Burger on Whole Wheat bun with lettuce, tomato and dijonaise because it was a good sized burger that was extremely lean yet tasty. The turkey patty was flavored very well and generously large, providing a substantial portion of protein. Topped with the lettuce, tomato and dijonsie, this burger was simple and delicious.
What we love about The Fresh Diet is that you simply do not feel like you are on a diet at all! Their goal is to provide a fresh, healthy new way to think about food as healthy eating is not really about eating only low-fat or low-carbohydrate foods. The Smokey Lemon Rubbed Salmon Filet with Herbed Zucchini Puree and Sautéed Collard Greens was a favorite as the salmon filet was tender without being overcooked. The zucchini puree was sublime and the sautéed collard greens still held the right consistency. Another superb fish entrée is the Filet of Lake Victoria Perch with Puttanesca Sauce, with Butternut Squash Puree and Roasted Zucchini Spears. The filet was flaky and adequately complimented with the puttanesca sauce. The butternut squash puree was naturally sweet and light while the zucchini spears were cooked just enough to still have a spring in each bite. Seafood lovers will also enjoy the Grilled Jumbo Shrimp with Lemon, Pepper, and Garlic Sauce with Roasted Red Beets and Green Beans. The meaty, robust shrimp are grilled with a light lemon pepper seasoning and a touch of garlic. Delicious and low in fat, shrimp is a great option for dinner. Other dinner entrees are Baked Chicken Florentine, Oven Fried Catfish Filet, Turkey Breast Cutlets, Grilled Tofu, and more.
