Peter Koullias is the Director of Kitchen Production at The Fresh Diet. He started working with the company back in July, 2010. Peter is responsible for production compliance for all Fresh Diet facilities. He is also part of a team that deals with menu development, and the enhancement of all aspects as they relate to client-compliance and satisfaction. Additionally, Peter contributes toward the development and implementation of new programs and services.
Great employees are our best asset here at The Fresh Diet, and nobody understands that better than Sandy Ornelas. As Director of both Human Resources and Purchasing, it is Sandy’s job to support this organization’s overall mission of growth and profitability. She creates policies and procedures that help TFD recruit and maintain exceptionally talented employees. As if that weren’t enough, Sandy also helps find the best products, source the best suppliers, and negotiate the best prices with quality service. It is because of the hard work of employees like Sandy that this company can continue to offer great meals and competitive pricing to clients.
Behind every great company is a great Chief Financial Officer, and The Fresh Diet is no exception. Our CFO Richard Silverman may have only held this position since July of 2010, but he is certainly no stranger to the company. In fact, Richard wrote The Fresh Diet’s very first business plan — and then revised it a few weeks later.
“When a company expands as rapidly as The Fresh Diet, projections tend to be outdated by the time they get put down on paper,” Richard says.

Our food is so delicious that The Fresh Diet should sell itself. Unfortunately, it doesn’t. Carlo Ricci is The Fresh Diet’s ECO (that stands for Executive Culinary Officer, by the way). It is not exactly a common title or a common position. Carlo really has his hand in nearly every aspect of the business, and he knows The Fresh Diet’s business plan like the back of his hand. As ECO, the duties that Carlo performs include: doing R&D for the menus, creating systems for operations in the kitchen, working with the chefs to make sure all of the meals meet The Fresh Diet’s standards, and helping set up new locations for The Fresh Diet.
