Fillet of Salmon with Spiced Pomegranate Sauce
6 ( 4-oz.) salmon fillets
3/4 teaspoon salt, divided
1/2 teaspoon ground black pepper, divided
1 cup pomegranate juice
1/4 cup honey
1 teaspoon lemon juice
1 tablespoon water
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/8 teaspoon ground ginger
1/8 teaspoon ground cayenne pepper
1/8 teaspoon Chinese five spice powder
1 tablespoon Smart Balance Buttery Spread
Adjust oven rack to upper middle position and heat oven to 350 degrees. Line rimmed baking sheet with foil.
Season salmon fillets with 1/2 teaspoon salt and 1/4 teaspoon pepper and place skin-side down on baking sheet.
Bake for 10 to 12 minutes until just cooked through.
Meanwhile, combine the remaining ingredients except Smart Balance Spread in a small saucepan.
Bring to boil over medium heat, then reduce heat to low and simmer for 10 min.
Remove pan from heat, and whisk in Smart Balance Spread until blended into sauce.
Drizzle each fillet with 2 tablespoons Spicy Pomegranate Sauce before serving.

“It’s easy! It’s the Thai Turkey Burger on Whole Wheat Ciabatta with Sautéed Bok-Choy & Peanut Sauce.
Why? Because not only is it just unbelievably jam packed with flavor, the savory Thai-peanut sauce blending so perfectly with the bok-choy, burger and richly seeded bread, but it is super substantial, filling and satisfying on every level – taste, texture, quantity, fullness. I was ultimately totally satisfied in all areas after eating it! There is nothing ‘diet-feeling’ about it.
In fact, my husband took a bite and tried to bribe the rest of it from me with offers of a mani-pedi! I was able to forget for that meal that I was on any kind of eating program and really feel like I was indulging, but in a healthy way.
There’s just something about biting into a good size sandwich that makes me feel incredibly satiated.
