TFD Holiday Recipe – Salmon w/ Spicy Pomegranate Sauce

Fillet of Salmon with Spiced Pomegranate Sauce

Serves 6

 

Ingredients:

6 ( 4-oz.) salmon fillets

3/4  teaspoon salt, divided

1/2  teaspoon ground black pepper, divided

1  cup pomegranate juice

1/4  cup honey

1  teaspoon lemon juice

1  tablespoon water

1  teaspoon cornstarch

1/4  teaspoon ground cinnamon

1/4  teaspoon ground coriander

1/8 teaspoon ground ginger

1/8  teaspoon ground cayenne pepper

1/8  teaspoon Chinese five spice powder

1  tablespoon Smart Balance Buttery Spread

 

Directions:

Adjust oven rack to upper middle position and heat oven to 350 degrees. Line rimmed baking sheet with foil.

Season salmon fillets with 1/2 teaspoon salt and 1/4  teaspoon pepper and place skin-side down on baking sheet.

Bake for 10 to 12 minutes until just cooked through.

Meanwhile, combine the remaining ingredients except Smart Balance Spread in a small saucepan.

Bring to boil over medium heat, then reduce heat to low and simmer for 10 min.

Remove pan from heat, and whisk in Smart Balance Spread until blended into sauce.

Drizzle each fillet with  2 tablespoons Spicy Pomegranate Sauce before serving.
