The Fresh Diet’s Executive Chef Yosef Schwartz is a graduate of the world-renowned Cordon Bleu Culinary Institute.
He and his culinary team develop menus that fulfill The Zone Diet’s 40/30/30 nutritional balance, with an “Eat Only What You Love” philosophy and three meals and two snacks every day.

Crab cakes drizzled with zesty chipotle lime sauce and peppercorn brandy glazed pork loin, are a few of the entrées The Fresh Diet delivers to clients. But Yosef, who created the dishes offered on the The Fresh Diet’s menu, has never actually sampled his own dishes, which have been praised by Phil Lempert, food trends editor for NBC’s “Today.”
While it might seem odd for a head chef to have not tasted any of his or her own creations, Yosef Schwartz can’t since he keeps kosher.
A Classical Beginning with a twist.
If you’re fortunate enough to watch Schwartz working his culinary magic in the kitchens of Miami, you’ll undoubtedly think of Ludwig Van Beethoven. Beethoven lost his hearing at just 25 years of age, but composed stunning musical pieces that moved all who listened for years afterward. As an Orthodox Jew, Schwartz, cannot taste his Le Cordon Bleu-influenced concoctions. Still, that doesn’t prevent him from plying his culinary artistry to a delighted clientele.
The California Culinary Academy’s Le Cordon Bleu program in Pasadena required a culinary externship to provide students with real, hands-on experience. Schwartz chose to serve his in Miami, where he met with his old high school friend Zalmi Duchman. It was he who had the idea of taking the famous Zone Diet premise a step beyond traditional practice.
The Start of Something Big.
Duchman hoped to open a Zone Diet menu and delivery service to provide freshly prepared food to Miami’s health conscious clientele, and Schwartz wanted to help.
Together, Schwartz, Duchman, and another high school friend started Zone at Home (now The Fresh Diet). ”I am the executive chef, and even though I am cooking diet food, I learned the foundations at culinary school that help me make great food healthy,” Schwartz says.
The Fresh Diet is designed to promote lean body mass, weight loss, decreased carbohydrate craving, lowered blood sugar levels, increased energy levels and impr oved mental clarity. The Fresh Diet makes it all easy and wonderfully flavorful thanks to it’s virtuoso Exectuvie Chef Yosef.
