Meet The Fresh Diet Staff Part 1 - Yosef Schwartz - Your Executive Chef

The Fresh Diet’s Executive Chef Yosef Schwartz is a graduate of the world-renowned Cordon Bleu Culinary Institute.

He and his culinary team develop menus bases on a 40/30/30 nutritional balance, with an “Eat Only What You Love” philosophy and three meals and two snacks every day.

Crab cakes drizzled with zesty chipotle lime sauce and peppercorn brandy glazed pork loin, are a few of the entrées The Fresh Diet delivers to clients. But Yosef, who created the dishes offered on the The Fresh Diet’s menu, has never actually sampled his own dishes, which have been praised by Phil Lempert, food trends editor for NBC’s “Today.”

While it might seem odd for a head chef to have not tasted any of his or her own creations, Yosef Schwartz can’t since he keeps kosher.

A Classical Beginning with a twist.

If you’re fortunate enough to watch Schwartz working his culinary magic in the kitchens of Miami, you’ll undoubtedly think of Ludwig Van Beethoven. Beethoven lost his hearing at just 25 years of age, but composed stunning musical pieces that moved all who listened for years afterward. As an Orthodox Jew, Schwartz, cannot taste his Le Cordon Bleu-influenced concoctions. Still, that doesn’t prevent him from plying his culinary artistry to a delighted clientele.

The California Culinary Academy’s Le Cordon Bleu program in Pasadena required a culinary externship to provide students with real, hands-on experience. Schwartz chose to serve his in Miami, where he met with his old high school friend Zalmi Duchman. It was he who had the idea of taking the 40/30/30 nutritional balancing premise a step beyond traditional practice.

The Start of Something Big.

Duchman hoped to open a gourmet food menu and delivery service to provide freshly prepared food to Miami’s health conscious clientele, and Schwartz wanted to help.

Together, Schwartz, Duchman, and another high school friend started the company which is now The Fresh Diet). ”I am the executive chef, and even though I am cooking diet food, I learned the foundations at culinary school that help me make great food healthy,” Schwartz says.

Originally I was going to title this article: The Great Salad Lie.

I can’t tell you how many times I’ve heard people say, “I’m trying to lose weight, I’ll just have a salad”.  Now don’t get me wrong, salads can be a great method of weight loss – at least in theory.

A good salad can be packed with vegetables, beans and other legumes, lean meats and more.  All great sources of nutrition and packed with vitamins.

We all know that vegetables are low in calories, (except for starchy vegetables) and high in fiber and can be extremely filling –  which is why it has gotten the reputation as the king of the diet meals.

This is great, until you slather on the dressing.

So let me ask you a question: Do you measure out your salad dressing, or just pour it on?

If you are a pour it on person, you’re going to be in trouble.  Most salad dressings, if you read the label, are portioned out by the tablespoon; usually with a serving being two tablespoons (note: 2 tablespoons are also equal to one ounce). Most dressings are also super high in fat.  They’re either oil based or cream based. Some creamy dressings have as many as 180 calories per 2 tablespoon serving.

So, if you are heavy handed with the dressing, you can easily take a low fat veggie meal and have 80+ percent of the calories come from fat.

Now, many people who are heavy handed don’t believe that they are.  In fact, if you asked someone to pour out 2 tablespoons of dressing, my guess is they would be off by a mile.

Now my point here isn’t necessarily that salad dressings, especially creamy dressings, are evil.  Instead, the simple point of this article is balance and measure.  If you are going to eat a salad, and you must have a creamy dressing, or any dressing at all, I have one word for you.

Measure!

At Crate and Barrel I found a great measuring tool – a shot glass, with “measuring cup” lines on it to calculate exactly how much dressing you want to put on your salad.  Neat idea.

So if you are normally heavy handed with the dressing, you can now keep the balance in the meal.
